     Hay guys today I will share a story about my practice week in Makassar tourism polytechnic, where today is the last day of practice in this week. as if the practice started at 8 o'clock so I left the hostel at 7:45 am. when I got in the kitchen I still had time for a donut breakfast. when at 8 we started one line in front of the kitchen to check the completeness of tool bag and grooming. after that we pray and our name is called one by one into the kitchen in the order of the absent paper.
      After that we returned one line in the main kitchen to pray and give an explanation of what the ingredients that have been prepared yesterday and what will be done today. after that we went straight to our respective stations to get ready. when chef Dino came we were all shown how to platting the menu we handle after that we explain what we make in restaurant. and when it was 12 o'clock we were ready to accept the order because the restaurant was open.

cut the tenderloin into 4 parts

give salt and palm sugar 
place the coriander leave over the meat 

put the meat into press plastic

process make the fish dressing

put the lemon juice

meat that has been in sous vide for 45 minutes with a temperature of 150 ° F

grill the meat

slice daging
thai beef salad

    After the restaurant closes we immediately do the general cleaning but this time we have to do general cleaning that we usually do on Friday, where all parts of the kitchen washed and all utensil and equipment was cleaned and included also exhaust also cleaned and the whole chiller and freezer was in clean. after doing the general cleaning which is quite a lot of energy we also eat together in front of the kitchen. and after that we are one line to pray and go home.
